No Bake Blueberry Delight

Looking for a cute dessert that is simple to make, but will blow your taste buds away? Do you love blueberries or any kind of berry? Want to impress someone? If you said yes to any of these question then stop what you are doing and try this recipe out! It is a pretty cheap dessert to make and with such vibrant colours, how can you say no? Can you honestly tell me that this doesn't look appetizing?? Well I'm going to tell you guys how to replicate this dessert right now!


Time to make 40 min - 1 hour

Yield: Varies upon how big your cup is (I made about 4 cups using this recipe)


Utensils:

  1. Small short glass cups or jars (preferably around 6-9 oz glasses for optimal yield)

  2. Hand Blender or whisk

  3. Sauce Pot

  4. Spoons

  5. Grater

  6. Juicer (optional)

  7. Measuring Cups


Ingredients:

  1. Plain Oatmeal Cookies (Crumbled)

  2. 1 block of cream cheese (Softened)

  3. 1/2 cup of Confectioners (powder) sugar

  4. 2 tsp of Orange Zest

  5. 2 Tbsp of Orange Juice

  6. 1 cup of Whipping cream

  7. 2 tsp of vanilla

  8. 2 cups of blueberries or other berries (Fresh OR frozen) + 1 cup of fresh

  9. Strawberry (optional)

  10. Mint (optional)


Directions:

  1. Grind or smash the oatmeal cookies until they are fine or in crumbles. The more fine the better. Fill each of the glass cups with the grinds, about 1-2 cm high depending on height of your glass.

  2. Place blueberries into a small sauce pot. If you are using fresh berries, add a little bit of water to cover the bottom of the pot. If frozen then heat up as it is. Cook over low to medium heat for a few minutes until soft. With a spoon, start smashing up the berries roughly. Not too smooth and not too chunky. Add some powdered sugar and splash of vanilla. You may alter the flavour to taste. Add the confectioners sugar little by little so that it is not too sweet as some berries may be sweeter than others. Set aside and chill in the fridge.

  3. Whip the whipping cream. Combine the cream cheese, powdered sugar, orange zest and orange juice and mix well. Gently fold in the whipped cream until completely combined.

  4. Now remove the sauce from the fridge and bring out the cups with the oatmeal grinds. Begin adding some of the cream mixture keeping in mind you want at least 1 more layer. Add a thin layer of blueberry sauce next. Add just enough to cover the cream mixture. Afterwards add more cream mixture leaving a little bit of room at the top.

  5. If you are serving immediately then cut a strawberry and a few blueberries in half. Assemble them how you like with some full blueberries, some half, half a strawberry, and a few mint leaves for colour.

  6. If you are not serving immediately then do not garnish until you are ready to serve. This just allows your presentation to be as appealing as possible and the garnishes are as vibrant as possible.
