Ever try a salmon and it turned out to be really dry and difficult to eat? That's likely due to the fact that it is overcooked. Salmon, especially is very easy to dry out and overcook. The solution to this problem is by cooking it at lower temperatures as I have stated in this recipe. Cooking at lower temperatures can preserve some the meat and is a rein check on overcooking, but obviously make sure whatever meat you are cooking is cooked properly. Salmon cooks quite easily and quickly so fret not!
Pesto is also just a classic sauce that is inherent to Italian dishes and can you blame them? It's packed with flavour and holds tons of nutrition as its main ingredient is basil. ("Bah-Zil" in case you call it "bay zil"). This strong herb is well known for its powerful impact in dishes and the fragrant aroma that it gives off. It's easy to grow and is just so versatile. So why not give it a try! If you love pesto like I do, you should give this recipe a try!
Utensils:
Knife
Cutting board
Small Food Blender (optional) or Small Mixing Bowl
Baking Sheet (if worn out, use tin foil)
Oven
Spatula
Table spoon
Active Cooking Time: 10 minutes
Total Cooking Time: 25 minutes
Ingredients
Salmon filets (skinless) (slice up however many you want)
Kosher salt or seasoning salt (sprinkle just a little around the whole salmon)
Pesto
1/3 cup of Bread crumbs
1/3 cup of Parmesan Cheese
Dried Thyme, basil, oregano (optional)
Directions
Preheat oven to 325°F
(optional) lay down tin foil on the baking sheet if non stick does not work.
Place the salmon filets on the sheet, ensuring that they are not touching.
Spoon 1.5 Tbsp or more of pesto onto each filet using the back of the spoon/knife and evenly spread it out on the top part of the salmon only
Combine bread crumbs, dried herbs, and parmesan into a mixing bowl or blender and combine. Finer is better. Then Just lightly coat the top of the salmon.
Cook the salmon for about 11-13 minutes, then switch the oven to broil and heat it for about a minute near the top of the oven to get a nice golden brown crust without burning the crust or overcooking the salmon.
Serve immediately
