Whether you want to go out and buy fresh ingredients or are trying to get rid of leftover items in your fridge try creating your own combinations and let me know how it tastes!

Grater (If you grate your cheese)
Main Ingredients:
Eggs
Tbsps of Milk
Oil/ Butter
Salt and pepper

Ham and Swiss Cheese
Bacon, red onions (sliced), mushrooms (sliced), jalapenos (diced), and cheese
Pineapple (diced), mozza cheese, and ham
Note: These are just a couple of combinations that you can try, experiment and pick flavours you like! The more ingredients you use, the less of each ingredient you should put so you don't overwhelm the dish.
Directions:
Prep all the vegetables and/or meats and cheese you want add first. They should all be cut/grated small so that you can sprinkle them all. Set them aside.
Heat a non-stick pan over medium heat and add about 2-3 tablespoons of oil. Enough to spread around the bottom of the pan.
While the pan is heating add 2-3 eggs to a bowl and add some milk. I usually go for 1-2 Tbsp of milk for every egg I add. Beat the eggs with a fork until it is all incorporated.
Once the pan is hot (you can test this by adding a droplet of water hit the pan and it sizzles), pour the egg mixture into the pan and let it cook. After about 1-2 minutes the bottom should look like it is getting firm. You can use your spatula to poke around the edges to make sure it is and to make sure the omelette base is not sticking to the pan.
At this time sprinkle enough cheese to cover the omelette. A safe amount of cheese just covers the surface area but some people really like their cheese so add to preference. Quickly add your meats and/or veggies in a line roughly towards the centre of the circular omelette and sprinkle with salt and pepper. When firm enough, gently fold over the sides of the omelette just over the halfway mark OR fold it completely in half. If you fold it in half just ensure that you shift the ingredients more towards one side.
When your cheese melts and your omelette is no longer runny, transfer the omelette to a plate, garnish with green onions, ketchup, or paprika and serve.
