Teriyaki Salmon Poke Bowl

This next dish was originally developed in Hawaii during the 1990's and has recently gained some popularity over the last decade. The location of Hawaii is prime location for fish and other tropical fruits and vegetables. Typically the dish uses raw fish, but I wanted to substitute it with cooked salmon, but it is open to any substitution from fish to chicken.


The Poke bowl is a vibrant dish that exploits the natural colours in each ingredient and compliments the others. This is a fantastic meal for last minute dinners, but at no cost of any flavours. The savoury and sweet flavours blend marvelously to create a delicious meal for your family, or yourself.


There is minimal cooking involved as the majority of the work lies in the preparation of the vegetables, so that may be appealing to you as well. But you'll never know until to you test it out, so I present to you my recipe for my poke bowl!


Utensils/Equipment:

  1. Knife

  2. Cutting board

  3. Peeler (optional)

  4. Deep baking Dish (either glass or stainless steel)

  5. Large plate to place vegetables

  6. Spatula

  7. Fork, whisk, or something to stir the sauce

  8. Small mixing bowl

  9. Oven

Active Cooking time: 20 minutes

Total cooking time: 30 minutes


Ingredients

  1. 4 Salmon Filets (no skin) (~6 oz per person)

  2. 1 Cucumber (sliced however you want)

  3. 1 full carrot (shredded or sliced into small matchsticks)

  4. 1 avocado (divided into 4, and then sliced and fanned

  5. Broccoli (raw or boiled or roasted)

  6. Sesame seeds

  7. Green onion (diced)

Ingredients for Teriyaki Sauce:

  1. 1/3 cup low-sodium soy sauce

  2. 1 large orange (Juiced)

  3. 2-3 Tbsp of Water

  4. 2-3 Tbsp of Honey

  5. 4 Garlic Cloves (Minced)

  6. 2 Tbsp of Fresh Ginger (minced)

  7. 1 Tbsp of dried chili flakes (or to taste)

  8. 1/2 Lemon (Juiced)

  9. 1 Tbsp Flour/Cornstarch

Instructions:

  1. Preheat the oven to 400 F

  2. Prepare all vegetables and put aside on a plate. (If cooking broccoli then boil water or roast it in oil until soft)

  3. In a small bowl, whisk together all the teriyaki sauce ingredients. Spray the bottom of the baking dish of choice and place the salmon in and then pour the teriyaki mixture over top of it all.

  4. Bake in the preheated oven for 12-15 minutes until just cooked through. DO NOT OVERCOOK or it will be dry.

  5. While the salmon is baking, cook some rice.

  6. To plate, add the rice to the bottom of a rimmed plate or bowl. Add the cooked salmon. Layer the avocado and vegetables (carrots, broccoli, and cucumber) and garnish with sesame seeds and green onions
