Mango Panna Cotta

Panna Cottas are fantastic for parties and originates from italy! If you really want to impress friends or family, this is an easy dessert to make despite it looking complicated. This is also a really good option if you enjoy a smooth and creamy delicacy with tropical fruit flavours.


Yields: ~12-15 glasses (Can vary depending how much you want to fill up the glass)

Time to make: 40 minutes of active cooking and 3 hrs of rest time

Utensils: Muffin Tray, Stemless Wine Glass (Or whatever type of clear glass you would like)


Ingredients:

  1. 8 Medium Mangoes Pureed (Roughly 2 cups) (Ensure that they are ripe (not hard), this allows for better texture)

  2. 2 Cups of Mango Juice

  3. 8 Envelopes of unflavoured gelatin powder

  4. 3 cups of milk

  5. 2/3 cups of sugar

  6. 1 tsp of salt

  7. 3 cups of whipping cream

  8. 1 tsp of vanilla extract

  9. Fresh Mangoes (Optional)

  10. Fresh berries (Optional)

  11. Fresh Mint Leaves (Optional)

Directions:

  1. Throw your mangoes into a blender and puree it until smooth. Make sure there are no chunks as this will allow for a nicer texture for your dish. Set aside.

  2. In a microwave safe bowl, add all of the mango juice and sprinkle 2 envelops of gelatin on top. Wait about 5 minutes for gelatin to get soft (should rise and look like a valley or giant flower). Afterwards mix it into the juice with a spoon.

  3. Microwave the mixture on high power for 1.5 minutes and stir again until gelatin is completely dissolved. Really break up the gelatin to allow for smooth texture.

  4. Line your muffin tray with stemless wine glasses at an angle to create the diagonal design. If need be add a small cloth to stabilize it in place, but I did not need to do this. Mix the mango puree and the juice and gelatin mixture together.

  5. Pour or spoon the mixture into the wine glasses. I like to leave an inch or 1/2 inch from the rim to add fresh fruit on top once the dessert is complete. Once the glasses have been filled, chill in the fridge or if it's winter leave it in the garage for about 2 hrs or until set.

  6. While that is chilling, start making the panna cotta as it takes a while to cool before it can be added to the glass.

  7. In a large pot add the milk and 6 envelops of gelatin and then wait for 10 minutes.

  8. Raise the heat to medium and add the sugar and stir for several minutes to dissolve everything. Make sure your milk does not burn or boil or it may curdle and ruin the texture.

  9. Once dissolved, remove the pot from the heat and stir in vanilla, cream, and salt.

  10. Wait until the panna cotta is at room temperature (20 ° C or 68 ° F), before you pour the contents into the mango prepared glasses. Make sure the mango is mixture is set. Then simple pour in the panna cotta mixture in until it meets the corner of your mango mixture and is flat. Chill again for 1-2 hrs or until everything is set.

  11. If you choose, garnish with mint, and fresh berries, or mangoes. Enjoy!
