Do you ever have to make dinner, but have a bunch of other things to do? Does your salmon ever get really dry and overdone? Well this is a really easy recipe to make without having to constantly attend to the food you are making and produces a juicy salmon with almost no prep work!! As this quinoa was already pre-made, the only thing I had to cook was the salmon and quickly sear the broccolini.
Time to make: 20 minutes
Ingredients:
Salmon Filet
Salt and Pepper
Fresh Thyme
Lemon Slices
Fresh Dill
Garlic Butter
Oregano
Broccolini
Quinoa Salad (Simple quinoa recipe will be posted later)
Directions
Pre-heat oven to 400 F
On any baking sheet, lay out a sheet of tin foil (enough to wrap everything up without damaging the salmon filet).
Add a slap (~1/4 cup or generous amount) of garlic butter onto the tin foil.
Lightly season both sides of the salmon filet with salt and pepper and place on top of the garlic butter.
Throw in fresh thyme and dill and sprinkle oregano like in the picture above.
Cut up 3 slices of lemon per filet and place on top so juices can run down the salmon and it can absorb those flavours.
Wrap up the tin foil so that minimal air escapes (look like a little bag) or seal it.
Bake for ~15 minutes
Sear some broccolini
Lay down some quinoa on your plate, place the cooked salmon and broccolini on top, and garnish with lemon and serve!
